We spoke with Iliana Nava, market development manager customer solutions, Americas at Jungbunzlauer, about the company’s new low-acyl gellan gum, TayaGel LA. Nava told us that the fermentation-derived ingredient creates a smooth mouthfeel with a clear appearance, which is crucial in applications where clean taste and visuals matter.
